As friars we do rely on Providence and now Providence seems to rely on us in terms of being able to keep up at her pace...
People keep giving us lots of food which we usually are able to share with the poors who knock at our door. Yet, in the last few days we've been given lots and lots of bread which is now a bit stale. I wonder whether the poors are on strike those days...
Anyway, we do not really want to through bread away so that I remembered (ok I did spy on the web, but just a bit...) an old recipe based on stale bread; and it's a very easy one.
HERE WE GO
ingridients:
stale bread, provided by Divine Providence
tomato sauce, obviously Italian sauce
a big onion (I will use more than one as we all love onions)
salt
time
fantasy (necessary when all the stuff in the pot does not look too right...)
and good mood (this is essential when cooking)
PROCESS
first of all ask everyone if they trust you as a cook, if the answer is negative then you need to add some prayers to your ingredients.
Secondly you have to cut the onion without crying and there are a couple of tricks; the first one is to ask someone else to cut it, or the more charitable one is very easy. Before cutting the onion fill your mouth of cold water and miraculously you won't cry. Don't ask me how it works, I only know it does. I've known this trick since I was fourteen y.o. and I worked in a PIZZERIA; As being the youngest employee I had to cut a full bucket of onions every afternoon. Do not forget to spit the water once in a while as it would be very disgusting to swallow it.
ok, I have to say that from now on it's a down hill recipe.
Simply brown the onion in a pot with some good Italian Olive oil, when it turns into a golden colour add the tomato sauce, you can also add some capers or a some leaves of laurel.
After that you need to pour hot boling water for as many people as you have to feed and if you are not fainted thanks to the good smell add the stale bread.
This soup shouldn't be too watery neither too dry, if you have put too much bread then easly add some water and if there's too much water just add some more bread and so on... until you're able to feed all your neighborhood, because if you do that, then the Divine Providence will knock at your door too!!
